Wines of Italy
The Cavalleri family, as an ancient deed reports, have been landowners in Erbusco, ever since 1450. In 1905 Giuseppe Paolo Cavalleri, a landed gentleman in Erbusco, bequeathed his two sons Attilio and Giovanni his land property estate, the grant included a cellar for wine production, a relevant fact for those times. Up to 1967 white and red wines were sold on premises or sold in demijohns, in that year the wine region Franciacorta was recognised as apt to produced "D.O.C." wise by a government law, this provision brought about the necessity of regulating the whole matter, the time had come to bottle and label our wines and to look for more reliable and steady customers other than the occasional visitors at the winery. While our wineswere doing well on the tables of renowned restaurants, the cellar was still located in the old town centre, at that time it was Gian Paolo Cavalleri, Attilio's son, to take care of the family business. In the 1977 Gian Paolo turned 75, he felt that it was time for his son Giovanni to take over, but he did not give up the idea of a new cellar, the new premises, completed in 1980, were built right amid the family vineyards, just out of the town precincts. Giovanni took over and carriedon the business, keeping up and expanding the activity which ha accompanied the family throughout the centuries. The rejuvenation of the management, after his take over, did give new sings of renovated and thriving entrepreneurial spirit. Although busy in his primary activity as president of four financial companies, as well as member of board of directors of a bank, Giovanni Cavalleri did move his residence in Erbusco giving the company his dedicated and indefatigable experience as well as his fervent love for vines and wines. The first radical project for new investments and developments has definitely placed the winery among the top-rated in Franciacorta; new presses for soft pressing, steel tanks, refrigeration equipment for musts, replacement of old vineyards with new ones through an accurateselection of the clones of Chardonnay vine, judged as the best fitting the climate an soil characteristics of the district, were the necessary next steps. Incidentallythe Chardonnay is the main pillar and common denominator of Cavalleri's whites and sparklers.
The company, with the 1979 grape harvest, produced its first 6000 bottle of sparkling wine, traditional method in bottles, in 1982, after twenty-four months of ripening on the yeast, the company "champenois" could boast all its character and brilliancy right from its debut. The company staff was renewed and enlarged with yong, new enthusiastic energies. Giovanni's daughters Maria, Giulia and Carolina stepped into the company and prograssively took up administration, marketing and production duties. Although busy with their respective families and children, they still find the time to dedicate energies and abilities to the family company.
Pierliugi Calabria, the production manager,has been working with the company since 1980, the year of his high school graduation, he is now 37 and this is also the average age of the company staff. Aldo Pagnoni, the sales manager, has been with us for over ten years, an active, enthusiastic promoter of our products, he supplies the push and the drive for a steady and constant improvement of quality and a better service to the customers. The up-grading of the wine quality has come about not only through the most up-to-date winemaking technologies, but also with the support of a new winegrowing policy: a drastic reduction of the yield per hectare, the increase of the number of individual stock destiny, the definite exclusion of chemical products in vineyards, the rigorous selection of grapes during harvest and pressing. In 1984 and 1985 a further enlargement of the newly built cellar was imperative, the increase of production volumes of sparkling wine which was gaining ground on the market(60000-70000 bottles per year), the adoption of separate vinifications for separate vineyards, the aging of wines in "barriques" and, last but not least, the need of new rooms for office, for guest and customer wine tasting and as customer complimentary premies, all these urgencies called for more and better space.
With the nineties, the time came again to expand the cellar, as the company vineyards, from ten hectares have reached thirty-one hectares, our final aim as far as vineyard size is concerned, we consider this extension as "the optimum" and shall endeavour to keep it unmodified. The production of whites and reds, as well as, of the champenois, haskept within the limit of a lower-medium size company(200000 bottles annually) but it has consolidated its presence on the Italian market, while it has gained a substantial consensus in Germany, Switzerland, England, U.S.A., Denmark, Holland, Sweden and Austria.
